Chicken & Orange Salad

Here’s a simple lunch/dinner I make for my husband and myself if the same old boring sandwich doesn’t sound good, avoiding fast food and trying to eat healthier!

Ingredients:

Head of romaine lettuce
1 skinless, boneless chicken breast
Olive oil
Herb & garlic Mrs. Dash seasoning
1 Tablespoon Feta Cheese
1 Small can of Mandarian Oranges
Balsamic Vinegar Salad Dressing

Directions:

Heat up a tsp of Olive Oil in a non-stick skillet on medium heat. Sprinkle herb & garlic Mrs. Dash seasoning on both sides of the chicken.
Add seasoned chicken breast to the heated pan. After chicken is done cooking, cut into smaller bite size pieces.

Cut up/tear (your preference) the romaine lettuce and put on plate. Add chicken, feta cheese and mandarian oranges. Put a small amount of salad dressing onto your salad. Don’t drown your salad! I prefer using the salad dressing that comes in a spray (only 1 calorie per spray!).

Will make two plates of salads or one bigger portion for you! Eating more salad will help you fill up with less unhealthy snacks later!

Varation: Use 1 cup of baby spinach leaves instead of romaine lettuce.


*I made this salad before realizing I was out of the Balsamic Vinegar salad dressing so used Fat Free Italian Dressing instead. The Balsamic Vinegar salad dressing tastes so much better with it!
