Creamy Marsala Chicken

This is another family favorite that I need to make more often my twelve year old daughter said to me tonight. Enjoy!!

Creamy Marsala Chicken

Ingredients:

    • 4 boneless, skinless chicken breasts
    • 1/2 stick butter
    • 1/2 box of cream cheese
    • 1/3 cup Marsala cooking wine
    • 2 can Mushroom soup*
    • 1/4 cup water
    • Oregano
    • Basil
    • Garlic Salt
    • Pepper
    • Your favorite pasta – I prefer egg noodles for this dish

Directions:

1.  Combine a tablespoon each of oregano, basil, and garlic salt in a bowl and mix well.
2.  Coat both sides of chicken with spice mixture and pepper. Do not overcoat the chicken but make sure to season it well.
3.  Melt butter in skillet.
4.  Add chicken and cook medium-high for 20 minutes, flipping chicken every five minutes.
5.  Place chicken on low.
6.  In separate sauce pan, add cream of mushroom soup, water, wine and cream cheese.
7.  Heat sauce until nice consistency, stirring frequently.
8.  Add chicken to saucepan and pour butter from skillet and mix in.
9.  Cook pasta according to directions.
10.  Serve pasta with chicken and sauce on top.

*Healthier version can be made by buying the Healthy Choice soup or the 98% Fat Free soup.

When I make this, I opt to make double the recipe for the cream sauce so we have extra. You can either keep the chicken pieces whole or cut them into bite sized pieces. When I prepare it, I like to do the bite sized pieces (see picture below) and then put the spices on them so you can decide how much chicken you want plus it usually helps with more leftovers! After adding the chicken/butter to the sauce and mixing it in, I will sometimes add a little bit more of the spices to it – this is a personal sauce because I love my spices!
