Crockpot Roast

There are multiple ways to make a roast in a crockpot.  Find your favorite way to enjoy it!!

 

Crockpot Roast

Ingredients: 

  • 2 pound roast
  • 6 potatoes, cut into chunks
  • 1 medium onion, peeled and quartered
  • 4 carrots, peeled and chopped
  • 1 cup beef broth

Directions:

1.  Chop vegetables and place in the bottom of a crockpot.

2.  Season roast with salt and pepper and place on top of vegetables in the crockpot.

3. Pour beef broth on top of meat and vegetables.

4.  Simmer on low for 6-8 hours.

Roast Gravy Directions:

1.  Spoon liquid from the crockpot into a saucepan over medium heat.

2.  In a small bowl, place 1-2 tablespoons of flour.

3.  Add cold water while using a whipper or fork to make a smooth mixture, not adding too much to  make too watery or too little to make too thick.

4.  Once flour/water mixture is a nice consistency, pour and mix 1/4 cup of the roast liquid into the bowl.

5.  Add mixture into saucepan while stirring.

6.  Consistently stir to avoid flour clumps while gravy starts to thicken.

7.  Depending on consistency you wish to have, you can repeat this step.

8.  Season with salt and pepper.

Freezer Meal:

1.  Take a gallon freezer sealed bag and place it inside another galloon freezer sealed bag.  The ingredients are very heavy and to avoid the bag breaking, I like to use two bags.  You may also use the Glad FreezerWare containers found here.

2.  Combine seasoned meat and chopped vegetables in a gallon freezer sealed bag making sure you leave enough room for liquid and still be able to seal it.

3.  Pour beef broth in bag until roast and vegetables are covered, making sure you can still seal it.  You can also choose to use only one cup – this is a personal choice of how comfortable you feel with this step.

4.  Carefully seal trying to get as much air out of the bag as possible.

5.  Place in freezer making sure to not put anything on top of it until it freezes.

6.  When preparing to use roast, thaw in refrigerator for two days.

7.  Empty contents into a crockpot and cook on low for 6 – 8 hours.

 

Other variations for crockpot roast – instead of using beef broth you can use:

  • 1/2 cup water and 1 envelope onion soup mix (my favorite!)
  • 1 cup of beer (Guinness beer is a really good choice to use)
