Onion and Guinness Soup

Very tasty dish…if you like onion soup that is 😉

Onion and Guinness Soup

Onion & Guinness Soup

 

Prep: 20 minutes

Cook: 1 hour

Ingredients:

  •  2 tablespoons unsalted butter
  • 2 yellow onions, sliced
  • 2 red onions, sliced
  • 4 shallots, minced
  • 2 cloves garlic, minced
  • 3 cups beef consomme
  • 1 cup Guinness Stout
  • 2 bay leaves
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 tablespoon brown sugar

Directions:

  1. Melt butter in a large saucepan over medium heat.
  2. Once the butter is melted, add onions, shallots and garlic.
  3. Cook until onions are caramelized, approximately 30 minutes, stirring frequently during this time.
  4. Add the remaining ingredients – beef consomme, Guinness, bay leaves, dried basil, dried thyme and brown sugar.
  5. Simmer over medium-high heat for 30 minutes.

Servings: Makes 6-8 cups.
