Salmon Patties, Red Potatoes & White Gravy

Another family favorite recipe that I got from my dad is salmon patties, red potatoes and white gravy.  Enjoy!

Salmon Patties

Ingredients

  • 14.75 oz can of Salmon (found in tuna aisle)
  • 3/4 package of saltine crackers
  • 1 egg

 

Directions:
1.  Drain the juice from the can of salmon and crumble the salmon into a bowl.
2.  Place the saltine crackers in a gallon plastic bag and seal.  Take a rolling pin and roll over the crackers to crush them into a fine “dust.”
3.  Place crushed crackers and egg into bowl with salmon and mix well.
4.  With your clean hands, mold the salmon into flat patties (like you are making a hamburger).  Makes 4-6 patties depending on size you would like.
5.  On a griddle (I use my pancake fold over griddle and close it while cooking), place salmon patties and cook for 10 minutes or until done. If you use a flat griddle, flip after five minutes. You may  have to cook a little bit longer.

 

Red Potatoes
Ingredients:

 

  • 10-12 Red potatoes
  • Butter
  • Salt & Pepper
  •  

    Directions:

    1.  Clean potatoes with vegetable brush under cold water.

    2.  Put in boiling hot water gently for about 15-20 minutes until tender all the way through.

    3.  Drain water.

    4.  Serve “smashed” with fork with butter, salt and pepper.

     

    White Gravy

    Ingredients:

    • 4 Tablespoons white flour
    • 2 Cups milk
    • 4 Tablespoons butter
    • 1 teaspoon of salt
    • 1 teaspoon of pepper

     

    Directions:

    1.  Melt butter over medium-high heat in a skillet.

    2.  When butter is melted, add flour and whisk to blend the two.  Mixture will be thick.

    3.  Once mixture is hot, add milk and whip together until heated and consistency you like.

    *  If mixture is too thick, add 2 Tablespoons of milk.

    *If mixture is too thin, add 2 Tablespoons of flour.
