Shepherd’s Pie

This is our family version of shepherd’s pie.

Shepherd’s Pie

Ingredients:

  • 1 small onion, diced
  • 1 teaspoon of olive oil
  • 1 pound ground beef*
  • 2 cans vegetarian vegetable soup
  • 4 servings of mashed potatoes, already prepared
  • 1 teaspoon of seasoning salt
  • 1 cup of shredded cheddar cheese

Directions:

1.  Preheat oven to 350˚
2.  Brown onion in a skillet in a teaspoon of olive oil.
3.  Brown ground beef in skillet with the onion.  Drain grease from ground beef when done.
4.  In a 8 X 8 casserole dish, combine the ground beef and two cans of vegetarian vegetable beef soup and stir well.
5.  Whether you want to make instant or from scratch, prepare 4 servings of mashed potatoes.  Add a teaspoon of seasoning salt and blend in.
6.  Spoon the potato mixture on top of the beef/soup mixture. Do not stir in.
7.  Bake at 350˚ for twenty minutes or until the potato top is crisp.
8.  Take the shepherd’s pie out of the stove and add a cup of shredded cheese on top of the potatoes.
9.  Bake at 350˚ for five minutes or until the cheese is melted.
10.  Enjoy!

*Ground turkey can be substituted for a healthier choice
